Tea Background

Despite Green tea having been discovered more than 3,000 years ago, it was not being processed precisely until steaming-fixation (the first process when making green tea) being invented in the 8th century. Nowadays, almost all green tea is made by baking-fixation which started from the 12th century. Green tea is made from the leaves of Camellia Sinensis, and contains more nutrients and chlorophyll compared with other teas due to the absence of fermentation during processing.

After picking, the fresh leaves are spread out on bamboo trays and exposed to sunlight. There are three processes to make them into tea: fixation, rolling or shaping and drying up. Fixation is the most important process of making green tea. It means using the high temperature to evaporate water from the fresh leaves. High temperature also makes the enzyme inactive, therefore removing the fresh smell and releasing the fragrance. Finally, the leaves are rolled into various shapes and then dried.

    West Lake Dragon Well (LongQing) is the most famous name among all Chinese teas. The tea was born in Hangzhou city and has been enjoyed for 1,200 years. Emperor QianLong (1735-1799 A.D.) awarded the leaves from the eighteen tea bushes to make the Royal tea. Hangzhou city called 'heaven on earth' is surrounded by mountains on three sides in Zhejiang province. The city center is built around the eastern and northern sides of the West Lake. Historically, five villages in those mountains produce the best tea. Recently, the finest tea is from Shifeng (Mount Lion) and Meijia Wu. All the best LongQing tea from TLife is from Meijia Wu.

    Spring teas are made from the emerging tea buds and leaves of tea bushes awakening from winter dormancy. Vibrant in color and fresh in flavor.

    Green Spiral (Bi Luo Chun), second famous, just after LongQing was born in early Tang Dynasty (618-907 A.D.). Originally, the tea had another name which meant the high fragrance would scare you away. Emperor KangXi (1661-1722 A.D.) made a visit to Suzhou city. He tasted the tea and could hardly tear himself away from it. Based on the colour, shape and the spring season he named the tea. Green Spiral is grown on Mount DongTing which divides into East and West Mountain on two separate islands on Tai Lake in Suzhou city Jiangsu province. West Mountain produces the best tea. All the best Green spiral tea from TLife is from West Mountain on West Island.
